Dixie Kitchen & Bait Shop was the result of the imaginings of Paul Andresen, who spent his entire career in the hospitality industry. In 1994, with the benefit of an artist’s eye for visual appeal and an intense awareness of guest expectations, Paul set about planning a restaurant that would appeal to the diverse Hyde Park community. Dixie Kitchen Hyde Park opened in 1994 to almost immediate raves. Chicago Magazine selected Dixie Kitchen as one of the top 10 new restaurants in Chicago in May of 1995. Our original location at Harper Court in Hyde Park received extensive media coverage because of its menu and ambiance. It developed an immediate following which continued until its closure in 2009, and has lead to our growth into other Chicagoland communities. And although our original Hyde Park location has closed due to loss of lease, we are now serving almost all of your Dixie Kitchen favorites right next door at the Calypso Cafe. We are proud to have been in business in Evanston, IL since 1998, and Lansing, IL since 2002!

Dixie Kitchen owner Carol Andresen says that at age 71 this seemed like the right time for her to close the Church Street restaurant that's served southern style breakfast, lunch and dinner to Evanstonians since 1998. So a sign saying it was time to close is up on the locked storefront in the Galleria building at 825 Church St. Andresen and her late husband Paul started their small chain with a shop in Hyde Park in 1994 that gained some fame after a then state senator named Barack Obama started dining there. Andresen says the Evanston outpost never did as well as the Hyde Park site but that she enjoyed being part of the community here. But with rent costs rising and traffic tailing off, she says she wanted to bring the business to a close while she could still pay the bills and meet payroll. The Hyde Park location has been closed for a few years now, but a third site, in Lansing, Ill., will continue to operate under different ownership. Topic: BusinessNews

Dixie Kitchen Still to reopen ? Submitted by Guest (not verified) on April 12, 2016 – 3:08pm A month or so after closing there was a story that it would reopen and I know people thought that was to be “soon.” By mid-March I thought it must have re-opened but saw an article that it had not but expected to April 14(?), 2016  but now can’t find any update/confirmation. Dixie Kitchen opened in 1994, when Andresen and her husband Paul, both from Minnesota, decided to open a restaurant that catered to the diversity of the neighborhood. The bait-shop decor and hearty Cajun cuisine attracted Hyde Park and South Side residents living in an area with a notable shortage of sit-down restaurants.

Manager Walter Butler said the restaurant has lately seen a significant uptick in business, as new patrons and regulars come to the restaurant. Lately, the wait for a table has stretched upwards of two hours. 

Some of the most successful businesses in Hyde Park have been those that appeal to both the college community and South Side residents, a combination Dixie Kitchen fostered.

In the late nineties, we added a complementary themed restaurant to the Hyde Park scene under the name Calypso Cafe. Again, the goal was to transport our guests to the Caribbean with the ambiance and menu choices. At Calypso Cafe, we researched and perfected the process of making true Jerk chicken. Included in our recipe are several ingredients that are only available by import from Jamaica itself! Jumbo jerk chicken wings are our most popular appetizer. Almost too much food for one person, the jerk chicken dinner is another excellent choice. Other specialties include “fish in the bag”, BBQ ribs with a tropical twist, and house smoked shrimp pasta. The original location lives on at Calypso, which carries favorites from Dixie Kitchen Hyde Park on the menu.
